Custard: Coffee

Ingredients

I1:🥛3 cups half and half
I2:🥚5 eggs
I3:🍬¾ cup sugar
I4:¼ cup ground espresso
I5:🧂¼ tsp salt

Instructions

Step 1:Sous video at 175 for an hour
I1: 🥛 3 cups half and half
I2: 🥚 5 eggs
I3: 🍬 ¾ cup sugar
I4: ¼ cup ground espresso
I5: 🧂 ¼ tsp salt
Step 2:Filter
Step 3:Churn

Result

Good out of the churn. Good but a little icy after fully setting. My suspicion is that ice is forming crystals around the coffee grounds. Either better filter the coffee grounds out, or consider more fat.

Ingredients

I1:🥛1.5 cups cream
I2:1.5 cups brewed espresso
I3:🥚5 eggs
I4:🍬¾ cup sugar
I5:🧂¼ tsp salt

Instructions

Step 1:Sous video at 175 for an hour
I1: 🥛 1.5 cups cream
I2: 1.5 cups brewed espresso
I3: 🥚 5 eggs
I4: 🍬 ¾ cup sugar
I5: 🧂 ¼ tsp salt
Step 2:Filter
Step 3:Churn

Result

Worse than the original. Keep the grounds in next time. Also, take better notes. What exactly did you do to brew espresso? I think it was ¼ cup grounds steeped in cream and then filtered, but it’s very unclear. Maybe it was water that ran through a coffee filter, but that doesn’t seem like my MO. How did you get the grounds out?!

Ingredients

I1:🥛1 cup cream
I2:🥛2 cups half and half
I3:🥚6 eggs
I4:🍬¾ cup sugar
I5:¼ cup ground espresso
I6:🧂¼ tsp salt

Instructions

Step 1:Sous video at 175 for an hour
I1: 🥛 1 cup cream
I2: 🥛 2 cups half and half
I3: 🥚 6 eggs
I4: 🍬 ¾ cup sugar
I5: ¼ cup ground espresso
Step 2:Filter
Step 3:Churn

Result

Good. Maybe better than v2. If I want to filter out grounds, most of them can be filtered out by just letting them settle out during the cooling/waiting phase.

Ingredients

I1:🥛3 cups half and half
I2:🥚6 eggs
I3:🍬1 cup sugar
I4:¼ cup ground espresso (from ¼ cup beans)
I5:🧂¼ tsp salt

Instructions

Step 1:Sous video at 175 for an hour
I1: 🥛 3 cups half and half
I2: 🥚 6 eggs
I3: 🍬 1 cup sugar
I4: ¼ cup ground espresso (from ¼ cup beans)
I5: 🧂 ¼ tsp salt
Step 2:Filter
Step 3:Churn

Notes

I tried this because I decided that variant 3 had a somewhat oily mouthfeel and wanted to eliminate that. I really liked this variant. I also made this again with 12 Oreos chopped up and folded in. That was great. My housemate wanted it, and I didn’t bring it to the gym so she could enjoy it... but then she didn’t finish it quickly enough and I devoured it one hungry day.
