Custard: Cardamom (Black or Green)

Ingredients

I1:🌶️10 (green or black) cardamom
I2:🥛3 cups half and half
I3:🥚6 large egg yolks
I4:🍬1 cup sugar

Instructions

Step 1:Smoosh your cardamom
I1: 🌶️ 10 (green or black) cardamom
Step 2:Sous vide at 175 for an hour
I2: 🥛 3 cups half and half
I3: 🥚 6 large egg yolks
I4: 🍬 1 cup sugar
Step 3:Strain
Step 4:Churn

Result

Very good. Black cardamom has a smoky flavor. Green cardamom isn't smoky. Know your audience :-).

I'm considering grinding cardamom seeds with the sugar for an intense cardamom in the next round
