Custard: Banana

Ingredients

I1:🥛3 cups half and half
I2:🥚5 eggs
I3:🍌3 large bananas
I4:🍬½ cup sugar
I5:🌶️pinch nutmeg

Instructions

Step 1:Blend
I1: 🥛 3 cups half and half
I2: 🥚 5 eggs
I3: 🍌 3 large bananas
I4: 🍬 ½ cup sugar
I5: 🌶️ pinch nutmeg
Step 2:Sous Vide at 175 for an hour
Step 3:Churn

Result

A little bit icy but very good out of the churn. Will see how it sets. Very little custard/egg flavor. Maybe add an egg instead of increasing fat?

Better consistency. Was a bit icy some of the time, but was fine if it sat out of the fridge for a few minutes.
